    • Small batch wine made from 100% Cabernet fruit grown on our 5 acre premium, low yielding vineyard at Seppeltsfield in the Barossa Valley.
    • Full bodied, rich on the palate, classic range of balanced aromas and flavours. Grapes harvested at optimum ripeness and flavour.
    • Full-bodied, smooth in texture and structure, rounded tannins
    • Elegant structure and balance, subtle sweet oak

    The Oak

    • Careful oak management is a priority to avoid over-oaking and the consequent masking of the natural fruit flavours.
    • 22 months in 300L hogsheads
    • 25% new French oak, 75% old French oak

    Winemaking

    • Warm fermentation in open top fermenters, hand pumpovers, gently pressed, hand racked to clarity, unfiltered, no fining with foreign substances

    • 100% Shiraz. A full-bodied wine with intense colour. A wide range of black fruits, licorice, leather and oak aromas and flavours give the wine length.
    • Full-bodied, smooth in texture and structure, rounded tannins. Balanced, harmonious, with subtle, sweet oak.
    • 15.0% Alc.    Screwcap.   1.5L

    • A sweet, rich, young luscious fortified in which the fruit does the talking.
    • This handcrafted wine is made from only 1 barrel of 100% estate grown grapes.
    • The grapes were late harvested with abundant sweetness and rich flavours, fermented, then fortified with pure brandy spirit and nurtured in an old, seasoned French oak hogshead for 10 months before bottling.
    • Screwcap closure.

    Made to drink young and taste the fruit from the vineyard!

  • 2006 Single Vineyard Shiraz MUSEUM STOCK

    Classic handmade Barossa Shiraz.

    As with our 2005 Shiraz, we held back a small quantity of this wine. After eight years developing in the bottle, the bright fruit, oaky flavors and tannins have been replaced by a smooth, supple palate and mellowed fruit.

    Basket pressed,  made in open top fermenters with hand pumpovers and racked for clarity, the wine is nicely developed.

    Deep burgundy in colour, red fruits, hints of chocolate and savoury notes. Good persistence of dark fruits on the palate and finish.

    Drinking beautifully now and as with our 2005 Shiraz, will do so for many years yet.

    Alc: 14.9%

    After two years in barrel and eight years in bottle, the bright fruit, oaky flavors and tannins in this wine have been replaced by a smooth, silky palate and subtle fruit.
    Enjoy a ripe, warm Cabernet palate and blackberry and chocolate flavours.

    Safely bottled under stelvin closure, expect many good drinking years yet in which to enjoy this wine as it just gets better with age.

    Different to cooler climate Cabernet Sauvignon wines, a well made Barossa Cabernet can surprise and delight the most discerning palate!

    It has a rich, ripe, chocolate mint nose and lovely long, rich and weighty palate with intense sweet flavours.

    The Details

    • Made with 100% estate grown fruit from our 10 acre premium, low yielding vineyard at Seppeltsfield in the Barossa Valley.
    • A classic expression of the Barossa’s traditional blend which captures the intense characters of both varieties, this limited production hand crafted wine is made from estate grown, single vineyard, 60% Shiraz and 40% Cabernet Sauvignon.
    • The Shiraz and Cabernet were made as separate wines and blended prior to bottling. The grapes were harvested at optimum ripeness and flavour.
    • The wine has intense flavours, smooth texture, elegant structure and balance, rounded tannins and subtle oak.
